Spanish Tortilla

This Spanish tortilla is really tasty and a healthier version of the original. With sweet potato, parsnip, potato and red bell pepper.

Spanish tortilla is really a potato and egg pie. Soooo tasty I get every time I go to Spain, either as tapas or as lunch/ dinner with a nice salad.

It tastes even better with a little basil and a little balsamic on top.

If you are not in to red bell pepper you can change it to mushroom.

The best advise I can give for this dish but also in general is to buy organic veggies, then you don’t have to peel them and there is a lot of good fibers in the peel.

Ingredienser

  • 1.5 sweet potato (small)
  • 3 potatoes
  • 2 pastas (small)
  • 1 red pepper
  • 2 onions
  • 2 cloves of garlic
  • 2 tablespoons of oil
  • 8 - 10 eggs
  • salt and pepper

Instruktioner

Turn on the oven at 180 degrees celcius.

Cut onions in thin strips.

Mash garlic with your knife and chop finely.

In a food processor cut the vegetables into slices.

Fry onion and and garlic in a large frying pan.

When the onion is soft but not browned vegetables are added.

Fry them for 5-10 minutes at medium heat.

Whip eggs together in a bowl with some salt and pepper.

Grease a medium sized dish with oil.

Put the vegetables into the dish and flatten them a little.

Pour egg and put in the oven for about 20 minutes.
